Mechanisms of human taste interactions


Are you interested in combining sensory science with human physiology to understand the underpinning mechanisms for taste-taste interactions?



The five basic tastes, sweet, sour, salty, bitter, and umami interact with each other and affect each other taste intensities. These taste interactions are well-known and well-described. However, the underlying mechanisms for taste interactions and whether they are peripheral (on our tongue)- or central (in our brain) are mostly unexplored and unknown. We have developed a method to investigate such sensory interactions of the basic tastes using a split-tongue design. This project will investigate the taste interaction mechanism in a subset of tastes.
