The project is related to the research project “HOPeS – Holistic organic poultry production to improve sustainability, welfare and product diversity”, where we are analysing dual-purpose broilers as material for both meat and eggs in an organic production system. In the project, we are at the stage where we will look into the quality of the meat from the spent hens, the hens that have been through an egg-layer period. This meat was previously used as animal feed, however dual-purpose hens are a valuable product after egg laying due to their high body weight and breast meat yield and thus should be used for human consumption.
You will be part of the sampling, analysing and evaluation of the results related to meat quality traits like colour, drip loss, texture and fat content and fatty acid composition.
