Drop tensiometer


The interfacial tension between stripped sunflower oil and the protein solutions was measured. A J-shaped needle containing the oil was immersed in a cuvette containing the soluble protein fractions. A 10 µl drop was formed and the interfacial tension was recorded form droplet formation until equilibrium. After equilibrium was reached, surface viscoelasticity measurements were performed by oscillating the drop volume.
